黔东南州农村中小学校食堂食品安全管理现状调查

Research on current situation of food safety management in the rural primary and middle schools in Southeast of Guizhou

目的通过发现农村中小学校食堂食品安全管理存在的问题,提出加强学校食堂食品安全管理的建议。方法按照分层随机抽样法,选取黔东南州农村部分中小学校共2 777名学生进行问卷调查,通过问卷调查分析学生在学校食堂就餐时段及学校食堂食品安全管理现状。结果所有学生每天至少有一餐在食堂就餐。44.24%的中小学生在学校食堂吃中餐,66.97%的餐具经过消毒,28.21%的学生在学校食堂饭菜里曾发现不洁异物,12.31%的学生认为食堂做的饭菜有时没煮(炒)熟,28.08%的学生对学校食堂食品安全管理情况非常担忧。小学食堂食品安全管理情况好于中学,二者差异有统计学意义(P<0.05)。结论黔东南州农村中小学校食堂还存在食品安全隐患,食品安全设施设备需要完善,食品安全制度的执行需要强化,以确保学生的生命安全和健康成长。

Objective To found the problems of rural primary and secondary school canteen food safety management and provide the management recommendations for strengthening the canteen food safety. Methods According to the stratified random sampling,a questionnaire survey was conducted among 2 777 students from rural primary and secondary schools in southeast of Guizhou. Through questionnaire for students about the school cafeteria lunch time and the present situation and problems of school canteen food safety management were analyzed. Results All the students at least one meal a day in the canteen,44. 24% of the primary and middle school students in the school dining room chose Chinese food; 66. 97% of tableware were disinfection,28. 21% of the students found impurity foreign bodies in the school canteen meals,12. 31% of the students thought the canteen meals sometimes no（ fried） boiled,28. 08% of the students for the schools canteen food safety management were very concern. The situation of the elementary school cafeteria food safety management were better than secondary schools（ P〈0. 05）. Conclusion The primary and secondary school canteens in southeast of Guizhou also exist hidden dangers of food safety,food safety facilities and equipment need to be improved,the implementation of the food safety system needs to be strengthened to ensure the safety of students and healthy growth.
