摘要
豆粕是大豆提取豆油后的一种副产品,也是一种优质的植物蛋白质资源,本文通过单因素试验对豆粕蛋白的水解条件进行研究,结果表明:豆粕蛋白粉与水配制成固液比1∶12的豆粕蛋白悬液,维持pH为11,加入碱性蛋白酶4m L,在温度为55℃的条件下水解3h,豆粕蛋白的三氯乙酸氮溶指数(TCA-NSI)可由原来的8.3%增加到23.6%,豆粕蛋白的短肽含量大大增加。
Soybean meal was a by - product of soybeans after extracting soybean oil as well as a high quality plant protein re-source. In this paper,the study on hydrolysis condition of soybean meal was carried out by single - factor - analysis. The re-sults showed the TCA - NSI of soybean meal was increased from 8.3% to 23. 6% when hydrolysis condition was Solid - liquid ratio 1:12,pH 11,amount of protease 4mL,and hydrolysis for 3 h under 55℃. Oligopeptide content was increased greatly in soybean meal.
