富硒乳酸蛋白粉对乳酸菌生物学特性影响的研究 被引量:2

摘要 为初步研究富硒乳酸蛋白粉对乳酸菌生物学特性影响,选择乳酸乳球菌、鼠乳杆菌、嗜酸乳杆菌作为受试菌种,进行蛋白粉对乳酸菌生长增殖影响试验、耐温性试验、酸碱耐受性试验和胆盐耐受性试验以及对乳酸菌产酸的影响试验等。结果显示:蛋白粉具有促进乳酸乳球菌、鼠乳杆菌和嗜酸乳杆菌增殖的作用,富硒乳酸蛋白粉对乳酸乳球菌、鼠乳杆菌和嗜酸乳杆菌的最适浓度分别为1、3和4mg/mL,乳酸蛋白粉对其的最适浓度分别为3、6和9mg/mL;蛋白粉还一定程度的提高了乳酸菌的酸碱耐受性、耐温性和耐胆盐性;还提高了乳酸菌的产酸量。 To study preliminarily the influence of selenium enriched lactic acid protein powder on the biological characteristics of lactic acid bacteria,Lactococcus lactis,Lactococcus murinus and Lactobacillus acidophilus,were chosen as test strains.The protein powder growth inhibition test,temperature resistance test,pH tolerance test and bile salt tolerance test and production test were carried out in the study.The results showed that the protein powder could promote the proliferation on L.lactis,L.murinus and L.acidophilus.The optimum concentrations of element Se enriched Lactobacillus protein on L.lactis,L.murinus and L.acidophilus were 1,3 and 4 mg/mL.The optimal concentrations of lactic acid protein powder were 3 mg/mL、6 mg/mL and 9 mg/mL.The protein powder could improve the lactic acid bacteria pH tolerance,temperature tolerance and bile salt resistance,and improve the acid production of lactic acid bacteria.
