摘要
目的了解延安市安塞区市售面制品中铝含量情况,为政府决策、控制铝污染及相关食品的监管提供科学依据。方法随机抽取延安市安塞区主要超市、集体食堂、小吃店等各类市售面制品213份,按照国家标准GB/T5009.182-2003《面制食品中铝的测定》对所采集样品的铝含量进行检测,并且根据GB 2760-2014《食品添加剂使用标准》对检测结果进行评价。结果共测定各类市售面制品213份,合格184份、不合格29份,合格率为86.4%,铝的平均含量为46.7 mg/kg,检测范围为1.1~564.2 mg/kg。不同食品中铝含量差异有统计学意义(χ~2=164.6,P<0.5)。结论延安市安塞区油条油饼铝含量超标颇为严重,铝含量超标样品主要集中在小吃店和饮食连锁店。
Objective To determine the aluminum content in the sale of flour - made food in Yanan Ansai District, and provide scientific basis for the government decision - making, control of aluminum pollution and related food. Methods A total of 213 samples were randomly selected from the sup ermarket, manufacturingand selling store, group canteen and small restaurant in Yanan Ansai. The detection and evaluation were conducted for the samples with the national standard of GB/T 5009. 182 - 2003 and GB 2760 -2014. Results A total of 213 kinds of food were detected with the average aluminum content of 46. 7 mg/kg, the qualified rate was 86. 4%, the detection range was 1.1 - 564. 2 mg/kg, respectively. The difference of aluminum content in different foods was statistically significant (X2 = 164. 6, P 〈0. 5). Conclusion Fried fritters cake over the standard aluminum content is quite serious, and the excessive concentration of aluminum samples are mainly concentrated in the snack bar and food chain.
