摘要
以茶渣为提取原料,研究正交试验法优选茶渣蛋白提取工艺。主要通过研究料液比、提取时间、提取温度、碱液浓度等4个单因素对蛋白质提取率的影响,通过正交优化试验选取最佳提取工艺参数。试验结果表明,碱法提取茶渣中的蛋白质最佳条件为料液比1∶25(g/m L),提取时间110 min,提取温度70℃,碱液浓度0.2 mol/L。以此工艺流程进行茶渣中蛋白质提取试验,茶渣蛋白质提取率达到57.1%,为工业化生产提取参考依据。
The extraction technology of tea residue protein was studied by orthogonal experiment. The effects of four factors on the extraction rate of protein,such as ratio of material to liquid,extraction time,extraction temperature and lye concentration,were studied. The optimum extraction parameters were selected by orthogonal optimization experiment. The results showed that the optimal extraction conditions were as follows : ratio of material to liquid was 1 : 25 ( g /m L ),extraction time was 110 min,extraction temperature was 70 益 and concentration of alkali was 0. 2 mol/L. The extraction process of tea residue protein was 57. 1%,which could provide reference for industrial production.
