摘要
校企合作是烹饪教育发展的必然趋势。本文对烹饪教育校企合作的必要性,即餐饮业的大发展、外部环境,主要包括国内政策的支持和国外的经验借鉴进行分析的基础上,提出了我国烹饪教育校企合作应积极探索"政府主导、行业指导,校企联动、方案共定,资源共享、双元育人,企业为基地、员工是学生,教学做合一、产学研结合"的校企合作办学模式。
School-enterprise cooperation is the inevitable trend of culinary education. Based on the analysis of the necessity of the cooperation between cooking schools and enterprises caused by the development of catering industry and the external environment, i.e. domestic policy support and foreign countries experience, this paper proposes its own school-enterprise cooperation model. It holds that the cooperation should follow the following principles: "being government-led and enterprises guided", "education program being determined together by school-enterprise interaction,","offering dual education by sharing resources,", "education being enterprise-based education in which students are employees","teaching and learning being united in which production, education and research are integrated".
