江口萝卜猪肌肉氨基酸组成及营养价值分析 被引量:5

Analysis of Amino Acid Composition and Nutritional Evaluation of Muscle from Jiangkou Luobo Pigs

摘要 江口萝卜猪是贵州著名的小型地方猪种,主要分布于贵州省江口县、松桃县和岑巩县,它具有耐粗饲、适应性强、肉嫩和味香浓等优点。试验旨在探究江口萝卜猪肌肉蛋白质营养价值,为其今后肉品深加工提供理论依据和实践参考。采用氨基酸比值系数法对江口萝卜猪肌肉蛋白质氨基酸模式进行评价。结果表明,脱脂江口萝卜猪肌肉中总氨基酸含量高达80.74%,鲜味、甜味和芳香类族氨基酸的含量分别为19.43%,12.47%和7.57%,各种人体必需氨基酸种类齐全,且比例相对均衡,蛋氨酸+胱氨酸的氨基酸比值系数(RC)为1.10,比值系数分(SRC)为77.59。几种人体必需氨基酸中,第一限制氨基酸为缬氨酸,第二限制性氨基酸为亮氨酸和异亮氨酸。 Jiangkou Luobu pig was a famous miniature local breed,mainly distributed in the county of Jiangkou,Songtao andCengong in Guizhou province.It showed the better characters such as crude feed tolerance,strong adaptability,tender meat,and fragrant taste.The aim of this study was to explore the nutritional value of muscle protein from Jiangkou Luobo pigs,and to provide a theoretical basis and practical reference for meat processing in the future.Evaluation of amino acid pattern of muscle protein from Jiangkou Luobu pigs was processed using the SRC method.The results showed that the total content of amino acid in nonfat muscle was up to 80.74%.The concentrations of the flavor,sweet and aromatic amino acids were 19.43%,12.47% and 7.57%,respectively.All kinds of human essential amino acids in relatively a balanced proportion were contained and the SRC was 77.59.Ratio coefficient(RC) of methionine plus cystine was 1.10.Among human essential amino acids,the first limited amino acid was valine,and the second was leucine and isoleucine.
