摘要
常规蛋白酶水解大豆蛋白质水解时间过长,用微波循环辐射可以缩短反应时间。设计了微波反应器,比较常规蛋白酶水解大豆蛋白中和微波辅助蛋白酶水解大豆蛋白游离氨基酸含量,用甲醛滴定法进行比较,结果分析:经480 W微波辐射60 min胰蛋白酶水解,比常规不用微波胰蛋白水解300 min氨基氮含量还要多。微波辐射不但可以提高反应速率,而且可以提高氨基氮含量。
Hydrolysis of soybean protein by conventional protease was too long,microwave irradiation can shorten the reaction time.Microwave reactor was designed.Comparison of the content of free amino acids in soybean protein and soybean protein hydrolyzed by protease.Comparison with formaldehyde titration,the result analysis was after 480 W,60 min microwave irradiation,the hydrolysis of trypsin was more than that of the conventional microwave protein hydrolysate with no more than 300 min amino nitrogen content by microwave irradiation.Microwave irradiation could not only increase the reaction rate,but also increase the content of amino nitrogen.
