摘要
酱腌菜是经过腌渍加工后的蔬菜制品,是传统食品的典型代表和重要组成部分。现今人们对健康饮食要求越来越高,传统酱腌菜产业需要提质升级。因此,对国内外酱腌菜的产业现状和研究进展作了综述,对我国酱腌菜产业存在的问题进行了分析,并对其前景进行了展望。
Pickles,known as pickled vegetables,are a typical example and an important part of traditional food.As higher and higher requirement for the healthy diet is given,the traditional pickles need quality upgrade.The industry situation and research progress at home and abroad have been reviewed.The existing problems of pickles have been analyzed,and the development has been prospected.
