摘要 鸡肝是一类高营养的禽副产物,产量大,深加工利用具有较高的经济价值。本文介绍了鸡肝的产量、营养和深加工利用现状、鸡肝蛋白的综合利用研究,并从鸡肝的深加工利用角度,分析了鸡肝深加工中存在的问题,展望了鸡肝深加工利用发展方向,以期对鸡肝的利用和研究提供指导与参考。 Chicken liver is a kind of animal by-products with high nutrition and large yield.h will have high economic value for its deep processing.The yield, nutritive value and processing status of chicken livers were simply introduced, and the researches on comprehensive utilization of chicken liver protein were mainly focused in this article. Additionally, from the view of deep processing and utilization of chicken liver, the existing problems were also discussed. Finally, the future development direction for further processing chicken liver in our country was also prospected.This review would inspire other researchers and provide guidance and reference for the future utilization and research of chicken liver.
