摘要
食品过敏是一个世界性公共卫生问题。如何快速、灵敏、低成本、可靠地检测食品过敏原一直受到人们的关注。食品过敏原的检测可以分为蛋白质层面和核酸层面两大类技术。生物传感器因具有高灵敏度、微型化、低成本等优点,近年来成为食品过敏原检测的研究焦点。本文对生物传感器在食品过敏原检测中的应用进行综述,并对今后的应用研究方向进行了初步探讨。
Food allergy is nowadays regarded as a worldwide public-health relevance problem. The fast,sensitive and reliable methods to detect food allergens with low cost have gained tremendous attention.Detection of food allergens are primarily achieved via protein-based methods and DNA-based technology. Because of high sensitivity, low cost and easy to be miniaturized, detection of food allergens by biosensors has become the focus of current research. The major detection methods for food allergens by biosensors are reviewed in this paper. Meanwhile, the future development of biosensor technology is also discussed.
