富含甘油二酯的大豆油制备工艺优化 被引量:1

Optimization of preparation process of soybean oil rich in diglyceride

摘要 在无溶剂体系中采用磷脂酶催化,制备富含甘油二酯的大豆油。采用气质联用检测甘油二酯含量。考察水解时间、水解温度、加水量、加酶量以及pH对反应的影响。通过响应面试验,得出最佳水解条件为加水量25 mL、水解温度40℃、加酶量700μL、反应时间12 h。在最佳工艺条件下,得到大豆油中甘油二酯含量为16.3%。所得回归模型拟合情况良好,达到设计要求。 Production of soybean oil rich in diglyceride was catalysed by phospholipase in solvent-free system. GC-MS was used to detect the contents of diglyceride. The influences of conditions including hydrolysis time, hydrolysis temperature, water content, amount of enzyme and pH of solution on the reaction were studied. The optimum conditions obtained by response surface method were as follows: water 25 mL, reaction temperature 40 ℃, enzyme dosage 700 μL, reaction time12 h. Under optimum conditions, diglyceride content was 16.3%. The regression model was futted at fitting in good condition, to meet the design requirements
