摘要
为了对我国各地生产的小麦胚芽粉品质进行分析及量化评价,从各小麦主产地区收集了10个麦胚粉样品,针对营养品质、安全品质2个方面展开调查,检测了包括水分、灰分、脂肪、蛋白质、真菌毒素、微生物共13项指标。结果显示:各地区麦胚粉水分、灰分和总脂肪含量差异较小,而总蛋白含量差异较为明显,在各样品中4种真菌毒素含量均低于国家标准限量,但微生物污染情况较为严重,安全问题仍需要得到广泛的关注。
In order to analyze and quantitatively evaluate the quality of wheat germ powder products in China, 10 samples were collected from several main producing areas of wheat. Including moisture, ash, fat, protein, mycotoxin and microbial content, 13 kinds of nutrition and safety quality index of the collected wheat germ powder samples were investigated. The results showed that there were few differences in the moisture, ash and fat content among all samples, and obvious difference in the protein content. The contents of four kinds mycotoxin were lower than the national permissible limits in all samples, but the status of microbial contamination was serious. The food safety problem of wheat germ powder products would still require wide attention.
