摘要 多糖是一类重要的生物大分子物质,具有抗氧化、抗衰老、抗癌和提高机体免疫力等功能。近年来研究表明,多糖的分子修饰不仅可以提高多糖的生物活性而且能够拓展多糖的功能活性。综述了多糖修饰化学法中的硫酸化、磷酸化、乙酰化和酶法等酯化修饰方法,以及修饰后多糖的抗氧化、抗癌、抗病毒和免疫力等生物活性的变化,并展望其未来发展方向,为多糖酯开发及其在食品、药品等领域的广泛应用提供参考。 Polysaccharides is a class of important biological macromolecular material, which played significant role in antioxidation, anti - aging, anti - cancer, and improvement of body immunity. The recent research shows that molecular modification of polysaccharides can not only effectively improve the polysaccharides bioactivity, but also expand its functional activity. The chemical modification methods of polysaccharides such as sulfation, phosphorylation, acylation and enzyme, and their influences on polysaccharides biological activities were introduced, including antioxidation, anti - cancer, antiviral and immunity enhancing. The existing problems as well as development direction prospect were also discussed. This would provide support for their wide use in food, pharmaceuticals and other fields.
