摘要
黑森林蛋糕起源于德国,其融合了樱桃、奶油、樱桃酒的3种独特口味,口感细腻醇香,一直被视为甜点中的经典。研究了经典黑森林蛋糕制作工艺中的主要原材料鲜奶油、樱桃酒、樱桃汁、巧克力碎等材料的性质、口感、比例和营养价值,通过合理的制作工艺和单因素试验得出的最佳配比,制作出口感细腻、精致独特的著名甜点。
Black Forest cakes originated in Germany. With a combination of three unique flavors of cherry,cream and cherry wine,they taste smooth and mellow,and have long been considered a classic of desserts. This paper examined the properties,tastes,proportion and nutrition values of the main ingredients,including fresh cream,cherry wine,cherry juice,chocolate chips and so on,in the process of the cake making. Based on that,the optimum proportion was obtained finally through proper production process and single factor experiment. The study aimed to produce the famous classic cake featured by smooth taste and appealing design with good raw materials.
