摘要
鸡肉肉质鲜美、香嫩可口、营养价值高,具有一定保健功能,备受消费者喜爱。通过介绍鸡肉产品的营养价值、风味形成、分类、优质原料鸡品种,重点阐述鸡肉产品的国内外加工研究进展,指出了鸡肉产品生产中存在的主要问题,并针对这些问题提出相应的改进措施,对鸡肉产品的开发研究前景进行展望,为今后新型鸡肉产品的研究开发提供借鉴参考。
Chicken is a kind of delicious,nutritional and functional traditional meat which is particularly loved by people. In this article,introduced the nutrition,flavor,classification and good raw chicken of the chicken products,stressed the research progress of the chicken products in both home and abroad,pointed out the problems exiting in the processing,gave suggestions about the problem and put forward the development trend in the future,to provide reference to the research of new chicken products.
