摘要 "发酵食品工艺学"是一门涵盖微生物学、食品工艺学及发酵工程等多领域知识的综合性应用课程。将虚拟仿真技术实际应用于"发酵食品工艺学"课程教学中,不仅能取得较好的仿真效果,而且加深学生认识发酵食品生产工艺过程,并提高学习兴趣和强化教学效果。 Fermentation Food Technology is a comprehensive application course which covers many fields of microbiology,food technology and fermentation engineering and so on. The simulation system applied in the teaching of fermented food technology was feasible,which could simulate well the complete process of fermentation food. With appllication of artificial technique in Fermentation Food Technology,it couldn't only obtain a better simulation result,in which the students could understand the process of fermented food production pretty well,and could improve the learning interest and strengthen the teaching effect.
