摘要
水产品是一种优质的白肉来源,由于其高水分、高蛋白及脂肪多且呈液态的特点,在运输和贮藏过程中极易腐败。涂膜保鲜技术作为一种新兴技术已在水产品保鲜领域得到一定的应用,但仍处于探索阶段。本文概述了可食性涂膜、抗菌涂膜技术的原理及其在水产品低温保鲜中的研究进展,将对水产品涂膜保鲜技术的进一步研究和应用提供参考。
Aquatic product is a high-quality source of white meat. However,it' s easy to corruption in the process of transportation and storage because of its high moisture,high protein and fat is much but show the characteristic of the liquid. Coating preservation technology being a new technology has been a certain application in the field of aquatic,but still in the exploratory stage. This article summarizes edible film plating,the principle of antibacterial coating technology and the research progress in the low temperature preservation of aquatic products,which will provide the reference to further research and application of aquatic product coating technology.
