摘要 为研究不同能量水平饲粮对梅花星生长肥育猪生长性能、胴体品质及肉质的影响,选择2016年2月出生、生长发育良好、体重在15 kg左右的梅花星纯种肥育猪90头,随机分成3组,每组30头(公母各半,公猪去势),分成6个栏(6个重复)饲养,每栏5头猪,分别饲喂高能量组、中能量组、低能量组饲粮。预试期7 d,正试期168 d。结果表明,高能量组肥育期平均日增重为0.48 kg,料重比3.19,生长性能优于其他两组。同时高能量组屠宰率67.94%、胴体直长95.87 cm、眼肌面积30.29 cm^2、瘦肉率50.73%,肉色、pH、系水力均在理想优质肉范围之内,肌肉中脂肪酸、氨基酸含量等各项指标均优于其他两组,说明适当提高饲粮的能量水平能够改善肌肉的品质。 In order to investigate the effects of different energy levels on growth performancecarcass qualityand meat quality of Meihuaxing fattening pig, the 90 well grew Meihuaxing fattening pig which burn in February2016, were selected with the average weight of 15 kg plum star, which were randomly divided into 3 groups,each group were 30 head, were fed with high, medium and low three different energy levels of the diets, thepreliminary period was7 d, the test period was 168 d. After the test, slaughter determination the meat offattening were analysis, the results showed that high levels of dietary group, ADG 0.48 kg, feed-meat ratio 3.19,fattening performance were better than the others. Meanwhile high levels of dietary group slaughter rate 67.94%,carcass length 95.87 cm, eye muscle area 30.29 cm2, lean percentage 50.73% were higher than the other twolevels, meat color, pH value, hydraulic systems are within the scope of the ideal quality of meat, the fatty acidand amino acid content of muscle were better than the other two groups, this results shows increasing dietaryenergy levels can improve the muscle quality.
