摘要
为了探索脆肉鲩在北方地区的养殖情况,陕西眉县地区某渔场用蚕豆进行了为期4个月的草鱼脆化强化饲喂试验,以商品饲料饲喂组为对照,然后每组采集3尾鱼进行了肌肉质构与品质的检测。结果表明:与商品饲料饲喂的普通草鱼相比,脆化草鱼肌肉的肌苷酸含量、胶原蛋白含量、肌纤维直径等方面与普通草鱼无显著差异,但脆化草鱼肌肉表现出更高的熟肉率、黏附性、胶黏性、咀嚼性和回复性以及更低的失水率、滴水损失与肌纤维耐折力。脆化草鱼肌肉的肌束排列比普通草鱼肌束显得更加杂乱与不规则。
In order to explore the breeding situation of Ctenopharyngodon idellus C. et V in Northwest China,improved crisped feeding test of grass carp was in progress for 4 months using broad bean for feed in a fish farm of Mei county in Shaanxi province. Control group was apllied with commercial feed ,3 fishes in each group were selected for the detection of muscle texture and quality. The results showed that muscle inasinic acid content, collagen content and fiber diameter in Ctenopharyngodon idellus C. et V had no significant difference with those in normal grass carp, but muscle of Ctenopharyngodon idellus C. et V had an higher cooked meat rate and adhesion, better tackiness, chewiness, and resilience, while a lower water loss rate, drop loss and muscle fiber endurance. The results suggested that the texture properties in Ctenopharyngodon idellus C. et V were more disordered and more irregular in comparison to those in normal grass carp.
