摘要
测定、比较了脱蛋白前后石莼水溶性膳食纤维(SDF)的水合性质,体外吸附水、油脂、胆固醇等的能力及抑制α-葡萄糖苷酶、α-淀粉酶的体外降血糖能力.结果表明:石莼脱蛋白SDF的分子空间结构和化学成分发生了变化,其水合性质和体外油脂吸附力均极显著高于未脱蛋白SDF(P<0.01);未脱蛋白SDF对胆固醇的吸附力及体外降血糖的能力均极显著高于脱蛋白SDF(P<0.01).
Ordinary and deproteinized soluble dietary fiber(SDF) from Ulva lactuca L.were compared in terms of hydration properties,adsorption capacity on water,oil and cholesterol,and hypoglycemic ability of inhibiting alpha glycosidase enzymes and alpha amylase in vitro.The results showed hydration properties,oil adsorption capacity in vitro of deproteinized SDF were significantly(P<0.01) better than non-deproteinized sample due to differences on molecular space structure and chemical composition.While nondeproteinized SDF with low viscosity contained more glycoprotein to absorb cholesterol and regulate blood glucose level(P<0.01).
