顺德炸牛奶的速冻研究

摘要 顺德炸牛奶是广东名菜,诞生于广东顺德。由于炸牛奶外酥内滑、奶香浓郁,深受食客喜爱。但炸牛奶制作工艺复杂,并且较难储存。对此,本文针对炸牛奶速冻保存进行研究。得出结论:固形炸制采用175℃炸制30 s,速冻温度为-35℃。用此方法制作的速冻炸牛奶40 d内品质较稳定。 Shunde fried milk, which originated from Shunde, Guangdong province, is a famous cantonese dish. As a result of deep fried milk, crisp, slippery, milk rich flavor, loved by diners. But the technology of making fried milk is complicated and difficult to store. In this paper, the quick frozen preservation of fried milk was studied. The results showed that the solid fried system with 175℃ fried 30 s, frozen temperature for -35℃ . The instant frozen fried milk produced bv this method is more stable in 40 davs.
