摘要
人参果是一种原产南美洲的高营养价值水果,近几年在国内种植面积和产量持续增加,其深加工技术也快速发展。综述了近几年我国人参果深加工方面的研究进展,主要包括各种深加工产品的研发及相应生产工艺的优化,并展望了人参果深加工未来的发展方向。
Pepino fruit, which comes from South America, is a fruit of high nutritional value. Along with the increasing of cultivated area and yield of Pepino fruit,its deep processing technology develops very fast. In this paper,we reviewed recent progress on the deep processing technology of Pepino fruit in China, mainly including the development of new products and optimization of production process. Further,perspective of deep processing of Pepino fruit was proposed.
