摘要
以大豆分离蛋白(SPI)为主要原料,添加一定量的羧甲基纤维素(CMC)和豌豆淀粉(PS)制备大豆分离蛋白/纤维素/淀粉三元复合可食性膜,研究了成膜工艺条件,并对复合膜进行红外表征.实验结果表明:复合膜的最佳工艺条件为大豆分离蛋白量为50%(总质量)、纤维素和淀粉比例为3 1、甘油含量为30%(以大豆蛋白量计)、改性温度为70℃.红外光谱表征显示,SPI/CMC/PS三元复合可食用膜相溶性好,表明该工艺参数是可行的.
With soy protein isolate( SPI) as the main raw material,adding a certain amount of pea starch( PS) and hydroxyl methyl cellulose( CMC) preparation of soybean protein/cellulose/starch ternary composite edible film,film-forming process conditions were studied,and the composite membrane are infrared characterization.Optimum process conditions of the experimental results show that the composite membrane as the amount of soy protein isolates as 50%( total mass),3 1 in cellulose and starch,glycerin content is 30%( in soybean protein meter),modification temperature is 70 ℃.Ir characterization showed that SPI/CMC/PS composite ternary edible film has good intermiscibility and the process parameters is feasible.
