摘要
"中国烹饪始祖"崇拜由行业因素、现实因素和政治因素所致,经历了"先炊之人"到"灶王",再到"厨师祖师"崇拜的历史演变,现代餐饮业认祖和祭祀的责任与原则,是立足于民族优秀文化传承,并且有国际视野、发展眼光。中华民族饮食文化的十大历史人物认定,可以作为中国厨师祖师问题认识的参照。
]Adoration of the ancestor of Chinese cuisine,which is attributed to a number of factors such as industry , reality and polities, goes through historical development of “cooking initiators” →“ kitchen god” →“ chef forefathers”. The principle for obligations and seeking ancestors in modern catering industry should be estab-lished in inheritance of national outstanding culture with international perspective and development sight . identi-fication of the ten historical figures in Chinese catering national culture can be used for reference for understanding of Chinese chef forefathers .
