摘要
以玉米胚芽和大豆为原料,制备速溶高蛋白玉米胚芽粉。考察了加工过程中影响速溶高蛋白玉米胚芽粉得率和蛋白质水溶性的主要因素,得到速溶高蛋白玉米胚芽粉生产的最佳酶解工艺条件:中性蛋白酶添加量0.6%、酶解温度50℃、酶解时间90 min,速溶高蛋白玉米胚芽粉得率为63.6%。均质及喷雾干燥的最佳工艺条件:均质压力60 MPa,进风温度170℃,料液浓度20°Brix。此条件下制得的速溶高蛋白玉米胚芽粉,NSI值可达78.9%。
With the corn germ and soybean as raw materials, instant high-protein com germ power was prepared. The main factors affected the process, the yield and the protein water-solubility were investigated. The optimum conditions of enzymatic hydrolysis were as follows: Neutral protease amount of 0.6%, hydrolysis temperature of 50℃, hydrolysis time of 90 min, under these conditions the yield of instant high- protein corn germ power was 63.6%. Homogenized and spray-dried optimum conditions were as follows: homogeoizing pressure of 60 MPa, inlet temperature of 170℃, feed concentration of 20°Brix). Under these conditions obtained instant high-protein corn germ flour, NSI value was up to 78.9%.
