摘要
比较了过氧化苯甲酰和苯甲酸的国家标准,同时进行了过氧化苯甲酰转换成苯甲酸的影响因素研究,包括还原剂、水、提取溶剂和高温,应用标准物质的添加试验,找到了准确测定面制品中过氧化苯甲酰含量的方法。
Two national standard methods about determination of benzoyl peroxide and benzoic acid were compared. In addition, the factors which converted benzoyl peroxide into benzoic acid such as reducing agent, water, extraction solvent and high temperature were researched. Based on adding standard substances in samples, the accurate determination method ofbenzoyl peroxide content in flour products was concluded successfully.
