Vc混菌发酵中伴生菌解除产酸菌氧化胁迫的研究进展 被引量:3

摘要 "二步发酵法"是我国生产维生素C(Vc)生产的主要方法,其中的第二步由产酸菌与伴生菌混合发酵完成。产酸菌为普通生酮基古龙酸杆菌,伴生菌多为芽孢杆菌属。现有的研究表明:在Vc混菌发酵中伴生菌为产酸菌提供了营养物质以促进其生长并增强2-酮基-L-古龙酸(Vc前体物质)的生成。结合前人已有的研究基础推测,有关产酸菌生长慢、产酸低等问题,是由于产酸菌ROS代谢紊乱,产生氧化胁迫所致。解析两菌之间存在的氧化胁迫关系将有助于优化生产工艺,强化产酸菌生长与产酸。本文主要从产酸菌生长受到氧化胁迫,以及伴生菌解除产酸菌氧化胁迫等方面进行综述,并根据已有试验结果提出自己的想法,以及进一步研究和探索的方向。 The two step fermentation method is the main method for vitamin C production in China, and the second step is completed by mixed cultures fermentation with two bacteria of Ketogulonicigenium vulgare as the acid-producing strain and some Bacillus spp. as companion strain such as Bacillus megaterium. The previous studies have shown that B. megaterium provides some nutrients for K. vulgare growth and enhancs acid-production of 2-keto-L-gulonic acid(2-KLG), a precursor of vitamin C(Vc). The previous research suggested that the growth of K. vulgare is slow, and the production of 2-KLG is very low, which might be caused by the disorder of reactive oxygen species(ROS) metabolism leading to the oxidative stress in Vc mixed culture fermentation system. Analysis of the oxidative stress in the presence of two strains will help to optimize the Vc production process and strengthen the K. vulgare growth and 2-KLG production. In this article, the research progresses were reviewed mainly from the oxidative stress affect of K. vulgare and B. megaterium helping for K. vulgare relieving oxidative stress. Some prospective ideas were also put forward based on the previous experimental results for further research and exploration in the future.
