小麦-玉米淀粉/玉米醇溶蛋白双层可食用膜的研究 被引量:8

摘要 采用流延法制备小麦玉米淀粉/玉米醇溶蛋白双层膜,以拉伸强度和断裂伸长率为指标,通过单因素试验及正交试验确定其最佳制备工艺。结果表明:在乙醇体积分数95%、玉米醇溶蛋白的质量分数6.00%、水浴温度80℃、甘油添加量0.30 g/g玉米蛋白、聚乙二醇-400添加量0.15 g/g玉米蛋白条件下,双层膜机械性能最佳,拉伸强度和断裂伸长率分别达到9.62±1.54 MPa和75.12%±2.10%。该研究为其在食品包装中的应用提供了重要参考依据。 Edible composit films of wheat corn and zein were prepared by casting films-solution on leved trays. The single factors test and orthogonal test were used to optimize the conditions of mechanical properties which were the tensile strength and elongation at breat. The results showed that the optimum condition was 95% ethanol(V/V), protein content 6.00%(W/W), water bath tempersture 80 ℃, glycerol added 0.30 g/g zein and polyethylene glylol-400 added 0.15 g/g zein. Under these conditions for the films, the tension strength and elongation at break were 9.62±1.54 MPa and 75.12%±2.10%, respectively. Through the research, we achieved the method and the theory basis from the laboratory to the industrial production which were meaningful and useful.
