摘要
用于检测牛奶中活性蛋白的方法很多,但不同方法的灵敏度、准确度、稳定性及操作实用性均有差异,直接影响其适用范围。对牛奶中活性蛋白的检测方法进行综述,主要有电泳法、免疫化学法、色谱法、分光光度法、表面等离子共振、生物传感器和电化学技术等,并分析了这些技术的优缺点,以期能为牛奶中活性蛋白的检测及开发研究提供一定的参考。
Many detection methods for bio-active proteins in milk have been reported. The sensitivity, accuracy, stability and application of these methods vary to different extents. The merits and demerits of these detection methods, including electrophoresis, immunochemistry method, chromatography, spectrophotometry, surface plasmon resonance(SPR), biosensor technology, electrochemical techniques and etc., were reviewed, in order to provide reference for researchers for proteins detection and methods development.
