摘要
在当前大众创业、万众创新的新形势下,餐饮专业创新创业人才培养亟需破除创新创业环境有待优化、创新创业教育推动不足、创新创业教育与专业教育的融合协同不够等困境。而以南京旅游职业学院践行的融合"创新创业+"理念的餐饮专业人才培养机制、依托创新创业实践平台的"前店后校"模式、培养目标解构下的"餐饮+创新创业"协同能力模型、课程体系融入创新创业教育元素、专业教学中渗透培养创新创业能力及打造专兼融合的创新创业师资队伍建设等六大对策提供了全新思路。
Under the background of mass entrepreneurship and innovation,innovative and entrepreneurial talent training of catering program has to solve the problems of unfavorable environment for innovation and entrepreneurship,lack of innovation and entrepreneurship education initiative,insufficient integration of specialty education with innovation and entrepreneurship education,etc.. Taking Nanjing Institute of Tourism and Hospitality as an example,this paper puts forward six brandnew countermeasures as follows: to build a mechanism that integrates innovation and entrepreneurship education into the whole process of talents training,to form a close relationship between hotel and school,to construct a collaborative ability model of "catering plus innovation and entrepreneurship" by deconstructing training objective,to integrate innovation and entrepreneurship elements into curriculum system,to penetrate innovation and entrepreneurship in classroom teaching,and to build a sound team with both full-time and part-time teachers for innovation and entrepreneurship education.
