抗战时期重庆的中餐业

摘要 抗战时期,重庆的中餐业已趋繁荣,民间饮食交流日渐频繁。1941年重庆被确立为陪都后,随着其政治地位和城市影响力的迅速提升,来渝的军政要员和企业家、银行家、资本家迅速增多,为适应各省口味的地方风味餐馆纷纷开张,川味餐馆不再是中餐业的主导,地方风味餐馆成为中餐业的主流。将中餐业置于抗战这一历史大背景之中,探讨其在渝城波折发展的历程以及地区商业的发展、移民的分布等人地关系对餐饮业产生的影响。 During the period of anti-Japanese war, Chongqing communication was frequent. In 1941, Chongqing was regard catering trade had become prospering, folk diet ed as the second capital of China, its political status and influence were elevated, and the population of military and political officials and entrepreneurs, bankers, capitalists increased rapidly. The principle style of Sichuan restaurant was replaced by various local taste style to meet the demand of new comers. The influence of man-land relationship on the development of Chinese cuisine was discussed in respect of the historical background, frustrated commerce development and distribution of immigrants during that special time.
