摘要
研究了壳聚糖的加入对大豆分离蛋白中砷残留量的作用效果。试验选取壳聚糖加入量、吸附时间及吸附温度3个因素,探究了3个因素对大豆分离蛋白中砷残留量的作用效果。通过单因素试验及因素方差分析可知,壳聚糖对大豆分离蛋白中残留砷的去除过程中,3个因素作用效果显著,作用效果依次为壳聚糖加入量>吸附温度>吸附时间。
In this experiment,the effects of adding chitosan on arsenic residues in soybean protein isolate were studied. Three factors,chitosan addition,adsorption time and adsorption temperature,were selected to study the effects of three factors on arsenic residues in soy protein isolate. The results showed that the effect of three factors on the removal of residual arsenic in soybean protein isolate by chitosan was obvious by single factor experiment and factor analysis of variance. The effect of three factors was chitosan dosage>chitosan concentration>adsorption time.
