摘要 研究了一种新颖、便捷的检测液体食品中VC含量的方法和试纸。试纸组件以2,6-二氯靛酚遇VC变色的滴定原理检测液体食品中的VC含量,该试纸的测量范围为0.05~2.00 mg/m L,可精确到0.05 mg/m L,测定精密度较高,并且采用EDTA试剂和亚硫酸氢钠试剂,可以阻止金属阳离子和花青素等色素对检测的干扰,具有便捷快速测定的优势,同时操作十分简单,对操作者基本没有技术要求,适合于食品样品的现场检测和日常生活中检测VC的含量。 In this paper,a novel and convenient method for the detection of VC in liquid food were studied. Test paper components detected V C content in liquid foods through the titration of 2,6-dichloroindophenol in VC. The linear range were0.05~2.00 mg/m L with the limit of quantitation of 0.05 mg/m L. EDTA reagent and sodium bisulfite reagent was used in the method to avoid the disturbance of the metal cation,anthocyanin and other pigments. The method is simple,convenient and fast. Meanwhile,the method is suitable for on-site inspection of food samples and daily life to detect VC content.
