摘要 牛肉制假、掺假问题严重侵害消费者权益,影响进出口贸易。目前,基于DNA序列特异性以动物物种之间遗传信息的差异作为物种鉴定检测靶标的核酸检测方法已被广泛应用。该文综合论述牛源性成分核酸检测技术的研究进展,并对其发展趋势进行讨论。同时对牛源性成分检测的国内现行技术标准的适用范围、检测方法、检出限等进行详细分析,以供相关执法部门和广大检测工作者参考,为制修订牛源性成分检测技术标准提供理论依据。 Beef fraud, adulteration problems seriously violates the health and interests of the consumers, even influences import and export trade. The nucleic acid detection method based on the DNA sequence specificity that uses genetic information among different animal species as a detection target of species identification has been widely used. This review summarizes the advances in nucleic acid detection techniques avai lable for bovine derived material and discusses the development trend. At the same time, the applic able range, detection method and detection limit of the current China detection standards for bovine derived components were analyzed. In detail for reference by the relevant law enforcement departments and the majority of inspection workers,and lay the foundation for the revision of the technical standards for detection of bovine derived components.
