壳聚糖的研究进展与应用

Research progress and application of chitosan

甲壳素广泛存在于虾壳、蟹壳、动物骨骼、菌类细胞壁中。壳聚糖是甲壳素的脱乙酰基产物,具有吸附性、成膜成丝性、保湿吸湿等多种优良特性,在食品工业、农业、医疗、化妆品、功能材料等领域应用广泛。主要综述了壳聚糖在果蔬保鲜、抗肿瘤、化妆品、废水处理等方面的应用现状,并对其应用前景进行了展望。

Chitin widely exists in shrimp shell, crab shells, animal bones, the cell walls of fungi. Chitosan is a deacetylation product of chitin, it has many excellent properties such as adsorption, film forming and moisture absorption, etc. and it is widely used in food industry, agriculture, medical treatment, cosmetics and functional materials. This paper mainly reviewed the application status of chitosan in fruit and vegetable preservation, anti-tumor, cosmetic and wastewater treatment, and application prospect of chitosan.
