摘要
副溶血性弧菌是水产品中常见的食源性致病菌,它能够感受外界环境的变化并迅速做出反应。在水产品的加工贮藏过程中,对温度的控制是最常用的方式,因此,副溶血性弧菌需要耐受各种温度的变化才能够生存并保持毒力给食品安全带来威胁。本文综述了副溶血性弧菌在面临低温和高温胁迫时的生存能力及其生理响机制,并对其未来研究做出展望。
Vibrio parahaemolyticus is a common food-borne pathogen in aquatic products.It can sense the changes ofthe external environment andrespond quickly.During the processing and storage of aquatic products,temperature control is themost commonly used method.Therefore,Vibrio parahaemolyticusneeds to withstand various temperature changes to survive andmaintain its virulence to threaten food safety.This review summarizes the viability andphysiological mechanism of Vibrio parahaemolyticus in the presence of low and high temperature stress and makes a prospect for its future research.
