摘要
本文通过2,4-二硝基苯肼分光光度法与甲醛在碱性条件下生成酒红色的醌类物质,来测定食品中甲醛含量。进行方法优化,最佳显色条件为:显色剂的用量为2.8 mL、无水乙醇的用量为5.0 mL、KOH-无水乙醇用量为4.0mL、最佳显色时间为10min。测定了腐竹、面条、米粉、米线甲醛含量,样品的平均回收率都在100%~103%之间,RSD均小于3%。
In this paper, under the alkaline conditions of 2,4 - dinitrophenylhydrazine speetrophotometry and formaldehyde to produce wine red quinones, and then to determine the formaldehyde content in food. best color reaction conditions were as follows : the amount of the chromogenic agent was 2.8 mL, the amount of absolute ethyl alcohol was 5.0mL, the amount of KOH - absolute ethyl alcohol was 4.0 mL, the best color reaction time was 10min. dried beancurd sticks, noodles, rice flour and flee noondles were measured. The average recoveries of the samples were between 100% and 103% , and the RSD was less than 3%.
