摘要
为了获得乳酸和NaCl协同浸提消减大米粉中镉含量的最佳工艺参数,以镉超标大米为原料,分别采用单因素试验和正交试验进行工艺优化,确定了最佳工艺条件:大米粉目数60目,乳酸添加比例0.75%,NaCl添加比例0.5%,搅拌时间1h,在此条件下测定大米粉中镉的消减率为96%,经过消减处理后的大米粉可以进一步深加工为直条米线等米制品。
The research is aimed at obtaining the optimal process parameters of reducing the cadmium content in rice flour by synergistic extracting with lactic acid & NaC1. The project chose cadmium excessive rice as raw material, and adopted single-fac- tor test and orthogonal design test for process optimization respectively. The optimal process parameters obtained were rice flour which sifted out 60 mesh, adding ratio of lactic acid 0. 75% ,adding ratio of NaC1 0. 5% and mixing time 1 h. Under the above conditions the percentage of reducing of cadmium in rice flour was 96%. The rice flour treaded could be used to the rice vermicelli and other rice products.
