摘要
采用GC-MS快速分析中国传统保健酒——泰和乌鸡酒中挥发性成分,陈酿1~6年泰和乌鸡酒共确定36种挥发性组分;检测表明该酒采用小曲酒为基酒,检出了茴香脑、丁香酚、5-羟甲基糠醛等具有保健效果的挥发性成分;比较发现陈酿3年乌鸡酒挥发性成分含量高,陈酿1年酒中丁香酚含量最高,企业可据此优化工艺以提高产品质量。
bGC-MS was used for rapid analysis of volatile components of a Taihe silky chicken liquor which isChinese traditional health liquor, a total of 36 aroma compounds were found in the liquor aged from 1 to 6 years.The analysis showed that the base liquor was Xiaoqu liquor,which also found the liquor contained anethole,eugenol,5-hydroxymethylfurfural and other ingredients with health effects. The results gave that most volatilecomponents in the silky chicken liquor of 3 years aged had the highest content,while the content of Eugenolwhich had health effects in the liquor of 1 year aged was highset. Production enterprises may optimize theprocess to improve product quality according to the research.
