摘要
随着消费水平的不断提高,人们对肉品质的要求越来越高,肌内脂肪(IMF)是影响猪肉品质的重要因素之一。IMF与猪肉的嫩度、系水力和剪切力均存在显著相关关系。越来越多的研究表明,肠道微生物作为环境因子可以调控机体脂肪代谢。本文拟简述肠道微生物对机体脂肪代谢的调控及其对IMF的影响。
With the increasing consumption level, the demand for meat quality is higher than before- which is under the influence of intramuscular fat. There is a significant correlation between IMF and pork tenderness, hydraulic power and shear force. Numerous studies of gut mierobiota suggest that the gut microbiota could regulate body lipid metabolism as an environmental factor. This paper will briefly describe the regulation of intestinal microorganism and its influence on the body fat metabolism.
