摘要 右旋糖酐被广泛应用于医学、化工、食品等行业,是备受关注的糖类之一。其传统工艺是经微生物发酵所得,分子量排布较广,尤其中小分子量含量少,杂质较多,粘度大,后期处理过程繁琐。酶法合成多糖被认为是安全且有效的合成途径,但由于单酶合成所得的右旋糖酐分子量不易于控制,故文章以制备右旋糖酐为出发点,综述了双酶法定向合成右旋糖酐及其应用研究,为右旋糖酐的生产提供了新的理论支持。 Abstract: Dextran is widely used in medicine, chemical engineering, food and other industries, and it is one of the most concerned sugar products. Dextran produced by traditional process methods with microbial fermentation has a wide distribution in the molecular weight, low content of medium and small molecular weight, and more impurities, high viscosity, complex late processing. Enzymatic synthesis of polysaccharides is found to be a safe and effective synthesis method. However, the molecular weight of dextran obtained by single enzyme synthesis is not easy to control, so that take preparation of dextran as the starting point, review the synthesis and application research of dextran using double enzymatic method, and provide theoretical support for the production of dextran.
