摘要
为明确地理标志产品"宜宾酒"原酒中主要醇、醛、酯类物质含量特征,按照GB/T 10345—2007的方法,对255份原酒样品中11种单体物质进行测定,并分析不同物质含量特点及其之间的相关性。发现"宜宾酒"单体物质总体特征为:高含量的酯类,低含量的高级醇,以及较低含量的醛类,各物质之间相关性不高。研究结果为勾调高品质白酒提供依据。
In order to ensure the features of main alcohols, aldehydes and esters content of the geographical indication product ＂Yibin spirits＂ base spirits, according to the method of GB/T 10345--2007, the 11 kinds of monomers in 255 samples of base spirits material were determined. Analyze the content characteristics and the correlation between different materials. It was found that ＂Yibin spirits＂ monomer materials characterized as follows： high levels of esters, low levels of alcohols and a little low content of aldehydes. The correlation between materials was not high. The results provided the basis for blending high quality liquor.
