多氯联苯在鱼类食品中的污染特征和摄入风险研究进展

摘要 多氯联苯(Polychlorinated biphenyls,PCBs)作为典型的持久性有机污染物,具有生物毒性,极易通过生物富集作用在食物链中累积和传递,从而对人体健康构成威胁。鱼类食品作为普通人群广泛摄入的食品,其PCBs摄入风险不可忽视。本文对鱼类食品中PCBs的污染特征进行了综述,并对通过鱼类食品摄入PCBs的风险进行了讨论。 Polychlorinated biphenyls (PCBs) as a typical persistent organic pollutants (pops), has biological toxicity, and can accumulate in the food chain and transmission through biological enrichment, which pose a threat to human health. Fish food is one of the important food for general population, the PCBs intake risk from fish can not be ignored. So the pollution characteristics were summarized and the risk of PCBs intake from fish food was discussed in this paper.
