摘要 元宝枫油是一种优质、高档的保健食用油。2011年,卫生部批准元宝枫油为新资源食品。研究表明元宝枫种子含油率超过40%,油中不饱和脂肪酸含量达90%以上,其中亚油酸含量为37.35%,神经酸含量为5.52%,维生素E含量达125 mg/100 g,对人体具有多种医疗保健作用。综述了元宝枫油的成分、加工工艺及功能性的研究现状,并展望其开发前景,为元宝枫油的进一步加工、应用提供理论参考。 Acer truncatum Bunge. seed oil is a healthy edible oil which is high - quality and high - grade. In 2011, the Ministry of Health approved of Acer truncatum Bunge. seed oil as a new resource food. The oil content in Acer truncatum Bunge. seed is above 40%. The content of unsaturated fatty acids is above 90%, and the contents of linoleic acid and nervonic acid were 37.35% and 5.52%, respectively. The vitamin E content is 125 mg/100 g. Acer truncatum Bunge. seed oil has medical and health effects on hu- man body. The advances in component, processing and functionality of Acer truncatum Bunge. seed oil were summarized and its development was prospected, in order to provide theoretical reference for the further research and application.
