摘要
以中国四大著名菜系之一的淮扬菜为研究对象,以中国知网与相关国外文献数据库为基础,以中外淮扬菜研究综述为视角,从淮扬菜系菜品、历史文化、产业的营销推广研究等方面分析淮扬菜的研究和发展现状、存在问题,在此基础上,探讨了淮扬菜传播与发展的策略。
Based on one of the four famous Chinese famous cuisine—Huaiyang cuisine,CNKI and related foreign literature database,this paper reviews from the perspective of Chinese and Foreign research review on Huaiyang cuisine,analyses current situation of Huaiyang cuisine research from the aspects of Huaiyang cuisine dishes,history and culture,industrial marketing. Based on this,it discusses the dissemination and development strategy of Huaiyang cuisine.
