基于电子鼻检测缢蛏新鲜度的研究 被引量:3

摘要 气味是评价水产品新鲜度的重要指标之一。采用电子鼻技术检测了缢蛏在不同贮藏温度和时间条件下挥发气味成分的变化,以建立一种基于电子鼻的缢蛏新鲜度无损检测方法。结果表明,在0,4,10℃3个贮藏温度下,随着缢蛏贮藏时间的延长,电子鼻响应信号的响应值发生显著变化;主成分分析(PCA)、线性判别分析(LDA)均可以很好地对不同新鲜度的缢蛏进行区分。 Smell is one of important indicators for judging the freshness quality of aquatic product. Changes in volatile aroma and odor response of Sinonovacula constricta during different storage temperatures and time were characterized by electronic nose to establish a nondestructive evaluation method of Sinonovacula constricta freshness. The response signal values obtained by electronic nose of Sinonovacula constricta stored at 0, 4, 10 ℃, respectively changed significantly during storage.Sinonovacula constricta with different degree of freshness could be distinguished by both principal component analysis(PCA)and linear discriminant analysis(LDA). The electronic nose technique might be utilized as a rapid and nondestructive measure of evaluating the freshness of Sinonovacula constricta.
