摘要
胡椒是世界上重要的热带香辛料作物,含有多种生物活性成分,具有抑菌、抗氧化、抗肿瘤等多种生理功能。综述了近年来国内外对胡椒的化学成分及其生理功能的研究进展和胡椒的开发利用情况,为胡椒资源的合理开发利用提供了依据。
Pepper is an important tropical spice crop in the world. There are various bioactive ingredients in pepper, with an-tibacterial ,antioxidant, anti-tumor and other physiological functions. The research progress on chemical constituents and physiological functions of pepper in recent years both at home and abroad were summarized and the exploitation and utilization of pepper were reported in this paper.
