摘要 消费者对食品健康的认识愈加深刻,对绿色餐饮的需求越来越高。在理解绿色餐饮企业和绿色经营内涵的基础上,构建绿色餐饮企业的评价指标主体模型,以及绿色餐饮企业评价指标体系、相应权重和指标说明。只有坚持绿色采购、强调绿色加工、控制能源低碳、加强执行力等一系列措施,才能促进绿色餐饮企业健康有序发展。 Consumers' demand on green diet is getting higher and higher based on their profound know- ledge about food health. On the basis of understanding green diet catering enterprises and the import of green catering operation, we are to construct the principal modeling of appraisal index for green diet catering enterprises and its index system, corresponding weightiness and description of the index. Only if we stick to green purchase and emphasize the series of measures as green processing, low carbon energy control and strengthening executive force etc., can the orderly and healthy development of green diet cater- ing enterprises be promoted.
