中草药添加剂对不同猪种肉质中脂肪酸和胆固醇含量的效应

The Effects of Chinese Herb Feed Additives on Fatty Acid and Cholesterol Content of Pork Meat from Different Swines

为研究中草药对猪肉中所含有的脂肪酸和胆固醇的作用,采用了在晋汾白猪、晋阳白猪、山西黑猪、杜长大4个猪种的饲粮中添加中草药,并设有抗生素组和对照组,每组30头试验猪,试验结束后通过测定猪肉中脂肪酸和胆固醇的含量确定试验结果。结果表明,在饲粮中添加中草药添加剂的猪肉中不饱和脂肪酸和必需脂肪酸的含量均有所提高,晋汾白猪的不饱和脂肪酸提高最为明显,达到102.64 mg/g。山西黑猪的不饱和脂肪酸增长值最高,比对照组高出43.07 mg/g。中草药组4个猪种猪肉中胆固醇的含量出现不同程度的下降,中草药组比对照组要低22.8 mg/100 g。晋阳白猪的胆固醇含量显著低于对照组和抗生素组,其他猪种的胆固醇含量也低于对照组。抗生素组在4个试验猪种猪肉中不饱和脂肪酸、必需脂肪酸、胆固醇的含量变化没有规律。由此可见中草药能够提高不同猪种猪肉中不饱和脂肪酸和必需脂肪酸的含量,降低胆固醇的含量。

To study the effects of Chinese herb on on fatty acid and cholesterol content of pork meat, theexperiment is planed to add the chinese herb into the diet of Jinfen white pig, Jinyang white pig, Shanxi blackpig and Duroc-Landrace-Yorkshire, with the comparing group and anti-body group that each group contains 30pigs. After experiment the content of fatty acid and cholesterol of pork meat can be measured. The Result showsthat the content of unsaturated fatty acid and essential fatty acid of pork inreased because of adding Chineseherb into diet, especially the unsaturated fatty acid content of Jinfen white pig inreased highly to 102.64 mg/g.The content of unsaturated fatty acid of Shanxi black pig is the highest one, which is higher 43.07 mg/g thancomparing group. The cholesterol content of4 pig breeds groups adding Chinese herbal medicine decreased indifferent degree, which is 22.8 mg/100 g lower than comparing group. The cholesterol content of Jinyang whitepig is obviously lower than the the comparing group and anti-body group, so are the cholesterol content of otherpig groups lower than that in comparing group. The contents of unsaturated fatty acid, essential fatty acid andcholesterol in 4 pig groups were not regular. The result indicateds that Chinese herbal medicine can improve thecontent of unsaturated fatty acids and essential fatty acids in different pig species, and it can reduce thecholesterol content.
